The new bearing is sitting really tight but I would prefer to have it all the way in, not leaving 1-2 mm.

No, I wait until I feel confident that the bearing is ok until I put the retaining ring on.

Sorry my German is not that good, to which side should the protruding metallring face, inwards to the center of the car or outwards towards the brakes?
